HALLOUMI VEGETABLES BURGER
INGREDIENTS
2 tablespoons olive oil
1 small orange kumara, thinly sliced
1 red pepper, sliced
2 small yellow or orange sweetie capsicums, sliced
1 zucchini, sliced
1 small red onion, sliced
200gm Food Snob Cypriot Halloumi
Fresh greens
4 burger buns, toasted
Hummus or mayonnaise and Sweet chilli sauce to serve
INSTRUCTIONS
- Heat the oil in a frying pan and cook the vegetables in a batch until tender and just coloured.
- Wipe the pan clean and slice the halloumi thickly, pat each slice dry on paper towels.
- Spray or lightly brush the pan with oil and fry the slices until golden and softened.
- Layer each burger with hummus, greens, seared vegetables and halloumi then drizzle with sweet chilli sauce.
